Eggs are my go-to breakfast. Seriously, there’s rarely a time when I don’t feel like having eggs in the morning. Because of this, I’ve perfected how to make over-medium eggs since that’s my favourite way to enjoy them.

In this tutorial, I’ll show you how to make the perfect over medium eggs – golden, runny yolks with tender, firm whites 🍳.

Many people struggle with making over-medium eggs, particularly when it comes to flipping them without breaking the yolk.
However, my method offers a simple and foolproof way to achieve the perfect over-medium egg. You can finally enjoy a runny egg without compromising the yolk or having to worry about slimy, uncooked whites 😵💫.

To gauge doneness, I like to gently touch the yolk with my fingers to see how soft it is.

How to Prepare Over Medium Eggs
🍳 Heat a ceramic non-stick pan on the stove on medium-low heat. Then, add a touch of oil and gently crack in 3 eggs, making sure they are spaced apart.
🥚 Take a silicone, slotted spatula , nestle it under the egg and gently flip each one , making sure not to break the yolks. Let the eggs cook on the other side until desired doneness. I like to gently touch the yolk with my fingers to gauge the softness.
⏲️ Let the eggs cook for 2 minutes .
🍽️ Transfer the eggs out of the pan onto a plate and enjoy!

Common Questions
When it comes to ceramic non-stick skillets, you should always be using silicone utensils as metal will damage the pan. My favorite silicone spatula is linked HERE .
The whites should be fully set and opaque, while the yolk should have a thickened consistency with a slightly runny center. Gently touch the yolk to gauge its firmness without breaking it.

Yes, you certainly can! However, keep in mind that you will have to adjust cooking time as smaller eggs cook faster.
