These Greek Potatoes with Feta are one of my favorite side dishes. It’s simple to prepare, the flavors are out of this world, and they’re always a hit with everyone at the table. The Greek seasoning blend is perfection, and I love the tang that comes from the lemon juice 🍋. The roasted garlic is a simple but huge addition to this dish: sweet and caramelized with a deep garlic flavor that’s not at all pungent on the potatoes 🥔. Ingredients

🥔 Yellow Potatoes: Waxy yellow potatoes are best in this recipe, but you can use any kind you like. I like to peel them, but that is optional.

🌶️ Greek Seasoning: Use your favorite Greek seasoning blend. Most include oregano, basil, thyme, and rosemary. If the blend includes salt, then be very limited in adding additional salt.

🧂 Salt: Measure with your heart!

🫒 Olive Oil: Greek cuisine begs to be cooked in the best quality olive oil you can find. I love this one .

🧄 Garlic: It’s important to bake the garlic cloves with the peel on to prevent them from burning. Once the dish cools down, you can squeeze the cooked garlic from the peels.

🍋 Lemon: Fresh lemon juice keeps the potatoes juicy while they bake and brightens the flavors of the dish.

🧀 Feta: Repeat after me: “I will not buy pre-crumbled feta.” Please buy feta sold in brine. It is so much more delicious and fresh than pre-crumbled.

🌿 Parsley: Some fresh parsley garnished on top adds lovely color. You could also use fresh oregano or chives.

Nonna’s Tip 🧄

Leave the garlic cloves whole while baking so that they don’t burn. At the end, you can toss the garlic with the potatoes or simply spread it onto fresh bread.

  1. Make your own Greek seasoning blend by combining oregano, paprika, pepper, onion powder, garlic and 🧂 salt to taste to achieve similar results.

Yes, you can use any type of potato you like, but I find yellow potatoes are amazingly creamy in texture. Peeling the potatoes is optional.

You certainly can. However, keep in mind that if you use minced garlic you will get a stronger garlic flavor in these Greek potatoes. Roasting whole garlic cloves will give you a sweeter, more mellow garlic flavor. But both will work!

The potatoes should not touch in the baking dish. Otherwise, they’ll just steam. For extra crispiness, you can bake them uncovered for a few extra minutes

You can peel and cut the potatoes in advance and then store them in water in the refrigerator. However, it’s best to bake them just before serving so they stay crispy.

Make sure to coat the potatoes well with olive oil, and you can also line the baking dish with parchment paper.

Instead of a Greek seasoning blend, you can use any combination of the following, fresh or dry: oregano, basil, thyme, and rosemary. Seasoning should be to taste. (Measure with your heart!)
