Similar to the savory version of this recipe, this salad uses a mixture of vibrant, nutrient-rich fruits , which get evenly diced up , until they resemble little gems. 💎 The stunning salad is laid on a bed of cottage cheese, which is rich in protein and helps balance blood sugar . 📈 This is an ideal summertime ☀️ treat, when stone fruit is ripe and abundant! 🍑 🍒

Pairing high-protein cottage cheese will balance your meal, and the combination of sun-sweetened stone fruit with creamy, rich dairy creates a match made in heaven. 👼 This salad tastes like a sweet treat but remains quite nutritionally balanced . All the multicolored fruit makes for a stunning presentation, as well. 😍

How to Prepare Cottage Cheese Fruit Salad

🍽️ Spread the cottage cheese onto a plate and set aside.

🍑 Pass the fruit through the veggie chopper or dice it finely.

🍋 Next, squeeze a little bit of lime juice on top of the fruit and add a drizzle of hot honey.

🍯 Then, spoon the fruit salad on top of the cottage cheese and add an additional drizzle of hot honey on top. Lastly, garnish with fresh herbs, such as lemon thyme or mint.

  2. Use any fruits you love . Just keep it colorful! 🌈 Generally, I like to use anything with a bit of a bite to it (no bananas): melons, pears, nectarines, and so much more work well here too.
  3. A little lime zest is a nice addition here. Simply use a zester to remove some of the outer peel prior to juicing the lime.
  4. I like to enjoy this salad as-is, with a spoon or fork OR scooped onto tortilla chips . 🔺
