These Chocolate Covered Rice Cakes are hands down the best snack I’ve seen all year. I was 💡 inspired by Ambitious Kitchen and had to make it immediately. It is quite possibly the tastiest treat you will have and the idea is just brilliant. I used dark vegan 🍫 chocolate chips but you can use anything you enjoy.

Why You’ll Love Chocolate Covered Rice Cakes
Picture this: a crunchy rice cake, generously slathered with almond 🌰butter—a nutty spread that’s smooth yet delightfully chunky , like a peanut butter’s sophisticated cousin! Then, covered in a decadent layer of chocolate. The rice cake is crispy, light, airy, and the chocolate 🍫 melts in your mouth!
How to Prepare Chocolate Covered Rice Cakes
🍫 Begin by melting your chocolate in a heat-proof bowl either in the oven or over a double boiler.
🥄 Now, spread a tablespoon of nut butter onto each rice cake and then dip each into the melted chocolate (nut butter side down).
🧑🍳 Next, sprinkle the tops with chopped almonds.
🧊 Finally, freeze them for 30 minutes and then enjoy!
Nonna’s Tip 🍫
You can melt the chocolate in a microwave or over a double boiler which is what I did.

Variations and Substitutions for Chocolate Covered Rice Cakes
- Feel free to use any nut or seed butter you love for these.
- Use whatever 🍫 chocolate you love: semi-sweet, milk or dark all work.
- You can absolutely mix some 💪 protein powder into the melted chocolate as well.
- I topped these off with crushed almonds, but you could also try 🥜 peanuts, pistachios, hazelnuts or even a sprinkling of flaked sea salt as well.

Common Questions
I did chopped-up almonds, but hazelnuts would be divine as well as pistachios, peanuts, or even flaked sea salt.
Ideally 30 minutes in the freezer should do but keep an eye on it. When the chocolate is firm, it’s ready to be enjoyed.
I used plain flavor rice cakes, however, cinnamon-flavored would be nice as well!
Store them in the refrigerator as they will last for a few days.
