This Cheesy Baked Cauliflower Dish will be your new favourite side. I was having one of those late-night, genius-strike moments. You know, the kind where you think you’ve cracked the code to world peace ☮️ or, in this case, the ultimate low-carb side dish . At first, I was thinking mashed cauliflower, but then, like a bolt of inspiration, I realized: roasting it in creamy Boursin cheese is the way to go. Think of Cauliflower Gratin, but better!

Why You’ll Love My Baked Cauliflower Dish
Introducing my Cheesy Baked Cauliflower. It’s a low-carb dream come true, a side dish so incredible, it’ll make you question why you’ve ever settled for boring old potatoes. Imagine a cloud of creamy, cheesy cauliflower , roasted to golden perfection. It’s topped with Parmigiana Reggiano cheese which will have your tastebuds doing the tarantella 💃.
How to Prepare
🔥 Preheat your oven to 400°F (200°C)
🔪 Using a sharp knife , cut up the cauliflower into bite-sized pieces.

🌿 Next, add the cauliflower to a baking dish and place about 1/2 the block of herb Boursin cheese in the middle.
🧂Now, add in a pinch of salt and pepper. Drizzle over a tiny amount of olive oil and pour in the broth (or water) through the side.

⏲️ Bake uncovered for 35 to 40 minutes. Now, take it out of the oven, mix it all together, and enjoy.
Nonna’s Tip 🧊
Raw cauliflower works better than frozen cauliflower in this recipe, since the frozen variety holds a lot of water , resulting in a less creamy, more watery finished dish.

Variations and Substitutions for Baked Cauliflower Dish
- This recipe will absolutely work just as well with 🥦 broccoli .
- If you don’t have Boursin, mix some cream cheese with your favorite chopped 🌿 herbs and then add that to the center of the baking dish.
- Feel free to add 🧄 garlic powder, onion powder, or paprika to this Baked Cauliflower Dish for additional flavor.
- Use whatever broth you love in this dish: vegetable, chicken, beef, or bone broth will work. If you don’t have, simply use more water instead.
- You can also add additional veggies to this mix. Thinly sliced 🥕 carrots, onions, or bell peppers would be delicious and add nice color as well.
- If you like, add some 🌶️ heat to this Baked Cauliflower Dish. You can drizzle with a chili oil, or add some chili flakes to the dish before baking.

I absolutely love cooking with cauliflower. It is so versatile, and a dream if you’re living a low-carb lifestyle. It’s from the same family as 🥦 broccoli (obvs!), kale, and cabbage, so you know it’s super nutritious and works with a variety of cooking methods (think grilled, steamed, roasted or raw).
I love using cauliflower in this au gratin style because it holds up just as potatoes would, but it’s loaded with fiber and vitamins and won’t hit you with a carb overload. The cauliflower comes out so tender when baked this way, but it still holds up to the creamy sauce.

- Any main dish protein such as my Baked Parmesan Chicken , grilled 🥩 steak, or a simple Grilled Lemon Chicken Breast .
- Serve this Baked Cauliflower Dish with a 🥗 salad such as my Fajita Salad or Greek Feta Salad .

If you don’t have herbed Boursin, mix together cream cheese with your favorite herbs (oregano, dill, basil, parsley) and place it in the middle of the baking dish.
Yes, you certainly can, but it won’t be as creamy as it would be fresh out of the oven. To prep ahead, chop the cauliflower, have everything placed in the baking dish, and then pop it into the oven when you’re ready.
Yes, you would certainly be able to use a non-dairy cream cheese instead of Boursin in this Baked Cauliflower Dish.
