My mini Air Fryer Lemon Potatoes (greek-style) 🥔 are absolutely incredible and what home cooking is all about. These are all the flavors that I love in a potato dish, so if you ever come over for lunch this is exactly what I would serve on the 🍽️ table. This recipe couldn’t be easier and uses only just a few ingredients.

Why You’ll Love Air Fryer Lemon Potatoes

Air Fryer Lemon Potatoes are a 🫰 snap to make and deliver big on flavor. Because the mini potatoes are boiled quickly first, they’re so soft and tender inside. I love using my air-fryer for these so they get really crispy without using a lot of oil and I don’t have to turn on my oven. The tang from the 🍋 lemon juice makes these seriously addictive and I love topping them with some salty feta as well, but that’s optional.

How to Prepare

🫧 In a pot on the stove, boil the baby potatoes with the skin on for 10 minutes or until fork tender.

💧 Then drain them and place them on a flat surface.

🫳 Using a potato masher or a glass, gently press each one down.

🫒 Next, gently toss in a bowl with olive oil, spices and freshly squeezed lemon juice.

♨️ Air fry at 400F (200C) for 6 to 8 minutes until crispy.

🌿 Brush them with some extra lemon juice and then sprinkle on some feta cheese and parsley.

Nonna’s Tip ♨️

You can absolutely bake these potatoes in the oven instead of the air fryer. Bake at 425F (220C) for 20 minutes or until golden and crispy

Variations and Substitutions for Air Fryer Lemon Potatoes

  1. For an even more 🍋 lemony flavor, use the zest of a lemon as well.
  2. Garnish with 🌿 parsley, chopped chives or rosemary.
  3. You can use regular potatoes in this Air Fryer Lemon Potatoes recipe but cut them into smaller pieces to ensure they cook evenly and fit in your air fryer.
  4. Instead of oregano, you can also use dried herbs such as rosemary, thyme, or spices such as paprika or 🧄 garlic powder.
